Instructions

Making the Bars

  • Preheat the oven to 350 degrees. Line a 13 inch by 9 inch pan with parchment paper, ensuring to leave a 2-inch overhang on two opposite sides. Grease the parchment with cooking spray.
  • In a large bowl, whisk together the flour, baking powder, and salt until well combined.
  • In another large bowl, beat together the granulated sugar and softened butter using a handheld mixer on medium-high speed until smooth and creamy. Add the eggs and egg yolk one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture and mix with a wooden spoon until just combined. Don’t overmix!
  • Spread the batter evenly in the prepared pan and bake for 35 to 40 minutes, or until golden and set in the center. Let it cool.

Making the Frosting

  • In a large bowl, use a handheld mixer on medium-high speed to beat together the confectioners’ sugar and softened butter until smooth.
  • Add the heavy cream and vanilla, mixing until thoroughly combined. If you’re using food coloring, add it now and beat until you reach your desired shade.
  • Using the parchment overhang, lift the cooled bar from the pan. Spread the frosting generously over the top and finish with a sprinkle of your favorite decorations.

Notes

Tips: Don't overbake; ensure all ingredients are at room temperature for better mixing. Customize frosting flavors with almond extract or lemon zest.
